Rum Raisin Muffins




My recipe journal tells me that I originally made these muffins on 12/28/08. I remember making them. I can't remember if it was snowing, or if it was going to snow, or if it just happened to be that there was lots of snow on the ground. Either way, snow was involved, since it was, after all, December in New Hampshire. I woke up, thinking that I would bake us some muffins for breakfast. That much I definitely remember. I also remember grabbing my copy of Granny's Muffin House and bringing it into the bed with me so that I could find a suitable recipe.

To my dismay, almost every recipe called for dairy--milk, or sour cream, or buttermilk. I do not keep such things in the house regularly--they usually just end up going bad if I haven't bought them for a specific recipe. But, alas, I did not want to leave, due to the snow situation. Finally, I found the one recipe in the book that used only ingredients in the house--Rum Raisin Muffins.

This was the first recipe I ever made out of this cookbook, so I wasn't sure what to expect. It's a quirky book, at best, written in what I take to be a grandmother's Southern accent, with lots of apostrophes where g's should be, and lots of funky little words. Take, for instance, this sentence from the head notes of the Rum Raisin Muffins: "It's because they're fixin' all the goodies for the homecomin' picnic tomorrow." So, with the all the cutesy intros, I was a little worried about the quality of the recipes. I didn't need to be.

These turned out wonderful. I don't know what you say about a household that doesn't have milk available on a Sunday morning, but has no trouble finding the dark rum. But, I can tell you that these muffins were worth it. They made the house smell incredible, and had just a little hint of that special holiday-season feel to them.

I made them again last Saturday. Again, I chose these muffins because I didn't have milk in the house to make any others. I also wanted the taste of the dark rum, without consuming the alcohol. I used up almost all of the Black Seal we had in the house (which wasn't much--trust me). I've told Kurt that he will have to go alone to replenish. Can't imagine waiting in line at a liquor store with a bottle of Black Seal in my hand, while nine months pregnant. Don't really want the angry glares.

Without further ado, here is the recipe for the Rum Raisin Muffins (colloquialisms and apostrophes removed):

1 cup raisins
1 cup boiling water
1/4 cup dark rum

2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
2/3 cup sugar
1 egg, beaten
1/2 cup butter, melted

Pour boiling water over raisins. Add rum and let sit about 30 minutes. Preheat oven to 400 degrees. Stir together flour and next three ingredients. Stir in the raisin mixture, liquid included, egg, and butter, just until moistened. Fill paper-lined muffin cups full, and bake approximately 20 minutes. Makes a dozen muffins.

TERRINE, TERRINE!

TERRINE: my definition: randomness food items floating in space jammed into a mold using gelatin or other fun products.

Ie: Jello explosion table of delightful desserts...

and fun times egg and meat party trapped in clear aspic...


Oh trompechompe. I've ignored you so badly in the last two months and for this I apologize. It seems as though Cupcake Mountain has taken over my life, and my hobby of updating this here blog fell by the wayside for a bit. But no longer.

So it was my birthday once again (you know how that thing happens? Once a year it seems to occur?) on November 15th and I had another "theme" party of sorts... "FOODIE!" My cousin-in-law and I are deeply obsessed with the television program Top Chef--so much so that I bought her a subscription to Food & Wine mag for her birthday, and one for myself too... and now a foodie themed birthday. The request: that guests bring a "foodie"-ish item. I was also told that I WAS NOT ALLOWED TO MAKE A DESSERT because I am always the dessert maker at parties-- I love making them and admittedly I was in PAIN AND CONFUSION because I was like, "Uh oh. I gotta make a savoury? What the H am I gonna make??"

So... I flipped through some varying recipe books of mine... and found the perfect mix of comedy and (hopefully)... deliciousness... the TERRINE!

I had seen the terrine be prepared many times on Top Chef. Okay, so it looks like it's a bunch of things packed tightly into a stainless steel mold, then chilled, upturned and cut into fancy slices that can be laid atop crostini or plopped (placed?) in the middle of a plate. Usually made with venison, or head cheese (yum!) or tongue, I've been told... since I have become a vegetarian of late (since starting to read Eating Animals... though reading this has since been interrupted by Barney's Version)... so I made mine with fresh goat cheese, asparagus, roasted portobello and sweet red pepper and wrapped it in blanched leek leaves.

So here is my documentation of "My First Terrine" !!! Enjoy! Recipe adapted from Martha Stewart's Hors d'Oeuvres cookbook...


MY FIRST TERRINE by L.Sung

Study first. Le Cordon Bleu handbook has some nice pics and ideas... for instance, putting your filling in a piping bag. Brilliant! Much less messy than trying to paddle and pat it down with a spatula...

Martha! Look at that triple threat of terrines from her Hors d'Oeuvres handbook! The two on the left involve the use of gelatin though, which I wanted to avoid.

First, line your terrine mold with cling wrap so it overlaps over the edges. Then, add quickly blanched leeks, lengthwise, as they make a handy dandy terrine wrapper.

Fill your piping bag with filling: mine is fresh goat cheese, beat with some plain yogurt to make it smoother, and sauteed finely diced leek ends (the white part).

Bricklay those cooked-until-just-tender asparagus in! It's like they're floating in clouds of tangy chevre!

Pat pat pat down with an offset spatula. Really pack 'er in.

Add more filling: I roasted sweet red pepper and slices of portobello mushroom for about 15 minutes on 400 degrees. Let cool completely before adding to terrine of course... Continue to "pipe and pat" and layer it up until you reach the top...

When you reach the top, fold over the leek edges. Then fold over the plastic cling wrap, then put the lid onto your terrine, put into fridge and let it set for 4-6 hours until well chilled!

Carefully unmold your terrine using a flat plate on top of the terrine--flip over and carefully unmold. Then, carefully unwrap. Then, slice with a sharp serrated knife!! I also made butter crostini (using store-bought French bread) in the oven, broil both sides so it gets crispy.

Hello, cuteness!! I thought it looked like a funny little caterpillar...

Slice 'er up and place on buttered crostini... Bite into deliciousness! Hooray!

Shopping!!!


After such a long time (probably one year I guess) I finally did some shopping again! I think the Malaysia Grand Sales is back coz every store is doing such crazy discounts on every item! Ohh it feels so nice to shop! It’s weird that since ages I’ve wanted to get myself a black cardigan and I just managed to get it last night. I had few choices in mind between few of MNG’s or ZARA but finally I got the MNG one even though it was slightly more expensive than the ZARA coz the ZARA’s one didn’t have a nice cutting!

Then I bought this slipper which I’ve also been wanting to get for such a long time (but I just couldn’t find a nice one!). It looks something like wedges but it’s a slipper. So I got it straight away the minute I saw it! Actually I was planning to get a pair of new formal black shoes but then I changed my mind just after I saw the slipper! Lol! After that, I got this 2 spaghetti straps from MNG and a store called Chelo… really worth it!

Elizabeth Bathory




Elizabeth Báthory

Elizabeth Báthory (Báthory Erzsébet di Hungaria, Alžbeta Bátoriová(-Nádasdy) di Slowakia, Elżbieta Batory dalam Polandia, lahir 7 Agustus 1560 – meninggal 21 Agustus 1614 pada umur 54 tahun), adalah countess Hungaria dari keluarga Báthory. Keluarga ini diingat untuk pertahanan melawan Utsmaniyah. Ia terkenal sebagai pembunuh berantai dalam sejarah Hungaria dan Slowakia dan diingat sebagai Wanita Berdarah Csejte (kini Čachtice). Istana Čachtice merupakan tempat ia menghabiskan hidupnya. Setelah kematian suaminya, ia dan empat pembantunya dituduh menyiksa dan membunuh ratusan wanita muda, dengan sekurangnya sebanyak 650 korban. Pada tahun 1610, ia dipenjarakan di Istana Čachtice dan menghabiskan hidupnya disana. Bathory lahir di Hungaria thn 1560, kurang lebih 100 tahun setelah Vlad 'The Impaler' Dracul meninggal. Kakek buyut Elizabeth Báthory adalah Prince Stephen Báthory yang merupakan salah satu Ksatria yang memimpin pasukan Vlad Dracul ketika dia merebut kembali kekuasaan di Walachia seabad sebelumnya.

Elizabeth terlahir dari pasangan Georges dan Anna Báthory yang merupakan bangsawan kaya raya dan salah satu keluarga bangsawan paling kaya di Hungaria saat itu. Keluarga besarnya juga terdiri dari orang-orang terpandang. Salah satu sepupunya adalah perdana menteri di Hungaria, seorang lagi adalah Kardinal. Bahkan pamannya, Stepehen kemudian menjadi Raja Polandia. Namun keluarga Báthory memiliki 'sisi' lainnya yang lebih 'gelap' selain segala kekayaan dan popularitasnya. Disebutkan bahwa salah satu pamannya yang lain adalah seorang Satanis dan penganut Paganisme sementara seorang sepupunya yang lain memiliki kelainan jiwa dan gemar melakukan kejahatan sexual.


Pernikahan dengan Ferenc Nádasdy

Tahun 1575, di usia 15 tahun Elizabeth menikah dengan Count Ferenc Nádasdy yang 10 tahun lebih tua darinya. Karena suaminya berasal dari bangsawan yang lebih rendah, maka Count Ferenc Nádasdy menggunakan nama Báthory dibelakangnya. Elizabeth tetap menggunakan nama keluarganya yaitu Báthory dan tidak menjadi Nádasdy. Kedua pasangan tersebut kemudian tinggal di Istana Čachtice, yang merupakan sebuah kastil di atas pegunungan dengan desa Čachtice dilembah dibawahnya. Suaminya jarang mendampingi Elizabeth karena Count Ferenc lebih sering berada di medan pertempuran melawan Turki Usmani (Ottoman Empire). Ferenc kemudian menjadi terkenal karena keberaniannya di medan pertempuran, bahkan dianggap sebagai pahlawan di Hungaria dengan julukan 'Black Hero of Hungary'.

Elizabeth yang masih muda tentu senantiasa merasa kesepian karena selalu ditinggal sang suami. Disebutkan dia memiliki kebiasaan mengagumi kecantikannya dan kemudian memiliki banyak kekasih gelap yang melayaninya selama sang suami tidak berada di tempat. Elizabeth bahkan pernah melarikan diri bersama kekasih gelapnya namun kemudian kembali lagi dan suaminya memaafkannya. Tetapi hal tersebut tidak mengurangi ketagihan Elizabeth akan kepuasan seksual. Disebutkan juga Elizabeth menjadi seorang biseksual dengan melakukan hubungan lesbian dengan bibinya, Countess Klara Báthory.


Satanisme

Elizabeth kemudian mulai terpengaruh dengan satanisme yang diajarkan oleh Dorothea Szentes, biasa disebut Dorka, salah seorang pelayan terdekatnya. Karena pengaruh Dorka, Elizabeth mulai menyenangi kepuasan seksual lewat penyiksaan yang dilakukannya terhadap pelayan-pelayan lainnya yang masih muda. Selain Dorka, Elizabeth dibantu beberapa pelayan terdekatnya yaitu: suster Iloona Joo, pelayan pria Johaness Ujvari dan seorang pelayan wanita bernama Anna Darvula, yang merangkap sebagai kekasih Elizabeth.

Bersama para kru S&M-nya, Elizabeth mengubah Istana Čachtice menjadi pusat teror dan penyiksaan seksual. Para gadis muda yang jadi pelayannya disiksa dengan berbagai bentuk penyiksaan seperti diikat, ditelanjangi lalu dicambuk dan juga menggunakan berbagai alat untuk menyakiti bagian-bagian tubuh tertentu.

Tahun 1600, Ferenc meninggal dan era teror sesungguhnya dimulai. Memasuki usia 40 tahun, Elizabeth menyadari bahwa kecantikannya mulai memudar. Kulitnya mulai menunjukan tanda-tanda penuaan dan keriput yang sebenarnya lumrah di usia tersebut. Tapi Elizabeth adalah pemuja kesempurnaan dan kecantikan dan dia akan melakukan apa saja demi mempertahankan kecantikannya. Suatu saat seorang pelayaan wanita yang sedang menyisir rambutnya secara tidak sengaja menarik rambut Elizabeth terlalu keras. Elizabeth yang marah kemudian menampar gadis malang tersebut. Darah memancar dari hidung gadis itu dan mengenai telapak tangan Elizabeth. Saat itu Elizabeth disebutkan 'menduga dan percaya' bahwa darah gadis muda memancarkan cahaya kemudaan mereka. Serta merta dia memerintahkan pelayannya, Johannes Ujvari dan Dorka menelanjangi gadis tersebut, menariknya keatas bak mandi dan memotong urat nadinya. Ketika si gadis meninggal kehabisan darah, Elizabeth segera mesuk kedalam bak mandi dan berendam dalam kubangan darah. Dia menemukan apa yang diyakininya sebagai 'Rahasia Awet Muda'.

Ketika semua pelayan mudanya sudah mati, Elizabeth mulai merekrut gadis muda di desa sekitarnya untuk dijadikan pelayan di Kastilnya. Nasib mereka semuanya sama , diikat diatas bak mandi kemudian urat nadi mereka dipotong hingga darah mereka menetes habis kedalam bak mandi. Seringkali Elizabeth berendam didalam kolam darah sambil menyaksikan korbannya sekarat meneteskan darah hingga tewas. Sesekali Elizabeth bahkan meminum darah para gadis tersebut untuk mendapatkan apa yang ia sebut 'inner beauty'.


Akhir Kiprah dan Penangkapan

Lama kelamaan Elizabeth merasa bahwa darah para gadis desa masih kurang baginya. Demi mendapat darah yang menurutnya lebih berkualitas, Elizabeth mengincar darah para gadis bangsawan rendahan. Dia kemudian melakukan penculikan terhadap gadis-gadis bangsawan untuk dijadikan korbannya. Namun hal tersebut menjadi bumerang baginya. Hilangnya gadis-gadis bangsawan dengan cepat mendapatkan perhatian di kalangan bangsawan, orang-orang berpengaruh, hingga Raja sendiri. Tanggal 30 Desember 1610, pasukan tentara dibawah pimpinan György Thurzó, yang merupakan sepupu Elizabeth sendiri, menyerbu Istana Čachtice di malam hari. Mereka semua terkejut melihat pemandangan yang mereka temukan di dalam Istana Čachtice. Mayat seorang gadis yang pucat kehabisan darah tergeletak diatas meja makan, seorang lainnya yang masih hidup namun sekarat ditemukan terikat di tiang dengan kedua urat nadinya disayat hingga meneteskan darah. Di bagian penjara ditemukan belasan gadis yang sedang ditahan menunggu giliran dibunuh. Kemudian di ruang basement ditemukan lebih dari 50 mayat yang sebagian besar sudah mulai membusuk.

Sekurangnya 650 nama tercatat dalam pengadilan atas Elizabeth Bathory di tahun 1611. Nama-nama itu didapat berdasarkan laporan dari berbagai pihak. Mulai dari keluarga-keluarga petani hingga bangsawan. Elizabeth sendiri tidak pernah didatangkan ke pengadilan untuk diadili secara langsung. Hanya empat pelayannya yang diadili dan kemudian dihukum mati. Raja Hungaria memerintahkan Elizabeth dikurung dalam kamarnya di Istana Čachtice selama sisa hidupnya. Para pekerja kemudian dikerahkan untuk menutup semua pintu dan jendela ruang kamar Elizabeth dengan tembok dengan hanya menyisakan lubang kecil yang digunakan untuk memasukan makanan dan minuman.

Tahun 1614, atau 4 tahun setelah Elizabeth diisolasi dengan tembok di kamarnya sendiri, seorang penjaga melihat makanan yang disajikan untuk Elizabeth tidak tersentuh selama seharian. Penjaga itu kemudian mengintip kedalam dan melihat sang Countess tertelungkup dengan wajah di lantai. Elizabeth 'The Blood Countess' Báthory meninggal di usia 54 tahun pada 21 Agustus 1614.




YIN DAN YANG




Konsep Yin Yang atau Yinyang (Hanzi: 陰陽) berasal dari filsafat Cina dan metafisika kuno yang menjelaskan setiap benda di alam semesta memiliki polaritas abadi berupa dua kekuatan utama yang selalu berlawanan tapi selalu melengkapi. Yin bersifat pasif, sedih, gelap, feminin, responsif, dan dikaitkan dengan malam. Yang bersifat aktif, terang, maskulin, agresif, dan dikaitkan dengan siang. Yin disimbolkan dengan air, sedangkan Yang disimbolkan dengan api.

Yin (feminin, hitam, bersifat pasif) dan Yang (maskulin, terang, bersifat aktif) adalah dua elemen yang saling melengkapi. Setiap kekuatan di alam dianggap memiliki keadaan Yin dan Yang.

Kemungkinan besar teori Yin dan Yang berasal dari ajaran agama agraris zaman kuno. Konsep Yin Yang dikenal dalam Taoisme dan Konfusianisme, walaupun kata Yin Yang hanya muncul sekali dalam kitab Tao Te Ching yang penuh dengan contoh dan penjelasan tentang konsep keseimbangan.

Konsep Yin Yang merupakan prinsip dasar dalam ilmu pengobatan tradisional Cina yang menetapkan setiap organ tubuh memiliki Yin dan Yang.
